NY Style bagels help!





What is wrong with this bagel? Did I not boil it enough? Underbaked? Over-baked? I didn’t have a pizza stone/steel. Does it make a huge difference? Please, any advice will help. Oh and one last thing. I found the center kinda dark. Almost like an off-white. It’s been a while I had a Ny style bagel. Maybe this is how it supposed to be.
