How do you convert sourdough recipes to yeast ones?
I would substitute about 1 gram of instanrt yeast for 70 grams of starter.
Actually, I often do just the reverse: convert yeast to starter at ~70 grams of starter for 1 gram of instant yeast.
If you’re concerned about keeping the hydration identical (not always that important if you’re making other substitutions along the way)
