Tartine flours

In Book No 3 there is an explanation of how to make high extraction wheat flour- aside from screening, the alternative is mixing 50% whole grain and 50% white. Is there a high extraction wheat flour available for purchase?

For the medium strong flour, is KA AP flour ok? Is there a better choice?

Here are all the different high extraction flours. For the med strong white flour component, I would go with a bread flour.
