Sourdough Doughnuts

All credit is due “Sweet-tooth Tilly and Sourdough Sam”. Just two of the real characters brought back to life in The Complete Sourdough Cookbook - Caldwell Idaho 1972, written by Don and Myrtle Holm. This is much more than a cookbook. It contains context and stories about the origins of the recipes within its pages.

First the recipe, and a very simple one at that. I have had most excellent results with many recipes in this treatise on Sourdough Cooking.

Sourdough doughnuts "Here’s how you make ‘em’. Mix:

1/2 C Sourdough batter (starter)
2 egg yokes or 1 whole egg
1/2 C sugar
1/2 tsp nutmeg
2 tbsps Shortening (I used butter)
1/4 tsp cinnamon
2 C flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/3 C sour milk or buttermilk

Sift dry ingredients, stir into liquid, roll out, and cut. Then heat oil to 390º and fry. An easy way no interruptions. Makes 17 doughnuts and holes."
