Just found this purple wheat flour at a local market, but apparently google doesn’t have much information on this wheat/ flour.
I just did a mix with merely this flour to test the flavor, 100% hydration, still really dry so I added a bit extra water and mix by hand. It has an amazing soft texture that’s hard to describe, but I reckon it will still be a very dense dough…
Just wonder has anyone used this flour before and can provide more insight? If not I will just keep trail and mistake.
