Proofed bread doesn't hold shape

I am following the Tartine country bread recipe. Everything looks great until I remove the loaves from the refrigerator after an overnight proofing and transfer it to the dutch oven. It pancakes/spreads out and loses its nice shape once removed from the banneton.

Any thoughts/advice?

Its either overproofed or not shaped well.
If overproofed: put into fridge sooner, even right after bulk; or use less time in fridge.
If not shaped: make sure there is strong gluten, and a taught skin.
