Half semolina and half all purpose flour pasta, hand rolled and hand cut.

For four people:
- 2 cups semolina rimacinata
- 2 cups all purpose flour
- 2 eggs
- A glug of olive oil π«
- Two pinches of salt.
- Water until the dough feels right, maybe 75-150g? Sorry I drizzled from a drinking glass lol

I mixed in a stand mixer and then kneaded the dough for a while on my pastry board.
Wrapped and rested the dough at least 30 min.
I cut the dough in two parts, and one at a time, rolled the dough thin, floured the sheet generously, rolled it up and cut it.
Boiled in salted water.
