Pasta with half semolina and half all purpose flour


Half semolina and half all purpose flour pasta, hand rolled and hand cut.

–
For four people:

  • 2 cups semolina rimacinata
  • 2 cups all purpose flour
  • 2 eggs
  • A glug of olive oil πŸ«’
  • Two pinches of salt.
  • Water until the dough feels right, maybe 75-150g? Sorry :slight_smile: I drizzled from a drinking glass lol

    I mixed in a stand mixer and then kneaded the dough for a while on my pastry board.
    Wrapped and rested the dough at least 30 min.
    I cut the dough in two parts, and one at a time, rolled the dough thin, floured the sheet generously, rolled it up and cut it.
    Boiled in salted water.
