As a lover of both olives and spelt, this recipe intrigued me. I’ve now made it twice (!) and I can’t say enough good about it! I was a little leery about the thyme so I just put in one T and it’s stellar! My husband can’t keep a smile off his face when eating it! Honestly, I’ve shied away from breads with anything in them – not exactly sure why, but the lamination method works so well! Thanks for this recipe! It’s definitely a keeper for us!!!

I made this substituting Øland winter wheat flour for the spelt and a heaping teaspoon of dried thyme. It is delicious! I’m looking forward to making it again with spelt and using fresh thyme this summer.
