Mockmill 200

Can not wait to try out my new Mockmill 200. Just arrived last night. Nothing fancy for my first loaf, just 15% whole grain Tartine-like loaf.

Bread is being started tonight. Ground some Turkey Red Wheat for the leaven and loaf.

Bread was a little disappointing, but not because of the Mockmill.

I should know better than to start a home improvement project with my wife (my idea, not hers) during bulk fermentation. The dough lost a lot of its structure by the time I got back to it. In fact, it more than doubled during bulk fermentation and I have never had that happen with sourdough before.

The bread tastes good but is just a much flatter loaf than I hoped for.

@KeithG2965 Yes, getting distracted by another project (or oversleeping and the dough does its thing before I’m up to do mine). I know that feeling well. I feel your pain.
