Low ash/bran Heritage Bread flour?

Hello, I am looking for the lowest ash organic heritage bread flour on the market. Essentially, the whitest heritage grain flour I can find that still has a high protein content. Emailing different mills I have learned that stone milling can grind the bran finer, leading to naturally more in the flour. The lowest ash content I have found so far is 0.55%, I just thought I would see what you fine folks have to say! Currently using Jovial white all purpose einkorn flour. Its great, but I want something stronger for croissants and more oven spring in certain recipes! Thank You!

Maybe white Kamut would work for you, definitely stronger than einkorn. Note that it will be soooo much more thirsty than white einkorn.
