What should the internal temperature of Tartine country loaf be when done? Baked two beautiful loafs, internal temperature was only 100 degrees. That seems too low. Thanks!
100 would be very underdone. Maybe your thermometer was reading Celsius? 100C=212F
Anything over 205F is considered done on an artisan-style bread. Over 190F for a pan/sandwich/soft loaf.
