Can anyone advise me on where to buy strong white bread flour in the Netherlands, or failing that anywhere that delivers to Amsterdam? I taught my daughter (who lives in Amsterdam) to make bagel at Christmas and bizarrely, in the land of windmills bread flour can not be found!
I hope someone comes through with a bread flour source for you.
If not, you might check out the High Gluten Flour paragraph in this blog post. It has a calculator for determining how much vital wheat gluten to add to a particular flour (you need to know your flour’s protein level) to bring the protein/gluten level up to the % you want.
I just spoke to my friend, she’s Dutch and lives in a smaller town, not Amsterdam. This is what she says:
Bread flour is easy to get here, in every supermarket.
Basic all purpose flour is called ‘patentbloem’ and for sale in every store. It’s use for stretchy doughs like pizza and also bread. It is sold at every supermarket I know.
For more complex, and higher rising bread she can use Italian type 00 flour, which is sold by specialist stores all over the country and also bigger supermarkets like albert heijn.
If she wants darker and more solid breads, she needs to use volkorenmeel or meel. That’s equal to strong bread flour. Sold at albert heijn (the walmart of NL):
It’s better to avoid tarwebloem, bloem and zelfrijzend bakmeel, as those are more suitable for cakes and tarts.
