How long should my starter sit out of the fridge before I use it…?

I use straight away. What’s the difference if you allow it to warm up and then use or use and give it the time it needs? If you use warm water it will bring it to the correct temperature anyway and by the time you’ve finished mixing in the ingredients I don’t think it’ll make much difference if any at all.

I proof it again and have gotten great results. Depending on ambient temperature, it can take 30 mins to 2 1/2 hrs.
