Heritage Baking by Ellen King

I have just bought this book called Heritage Baking and it mentions quite a few names of flours that I am trying to find, eg: Hard Red Spring Wheat ( Rouge de Bordeaux, Glenn and Pfeiffer, (a whole wheat derived from Spelt.)

Would anyone have heard where one could purchase these flours ? I live in Virginia and have found a couple of sustainable grain farmers, but have not found these types as yet. Thanks.

Rouge de Bordeaux is available from Camus Country Mill in Oregon. Tartine purchases some of their flour from this mill, as well as from Cairnspring Mills.

@bornabritt Linda, Breadtopia does have a hard red spring wheat. I don’t know if it’s exactly what you’re looking for, but I’ve included a link below for both the whole berries for home grinding and for ground flour.

I don’t know if you’re still looking for these wheat flours, but Janie’s Mill in Illinois has Glenn wheat in whole berry, whole-grain flour, and sifted (80% extraction) flour.
