Milled this fine with no sifting. The dough was very responsive, similar to Rouge de Bordeaux. It smells good, but very “generic” so I’m expecting the flavor to be pretty straightforward.

Gorgeous color and score on your loaf. I agree it’s not a baking spice aroma wheat like rouge or red fife.
Thank you! It was…ok. The dough was great to work with, very responsive and easy to manage even at 95% hydration. The flavor was meh, very generic and a bit bitter for my taste. I’d much rather use RdB or Yecora Rojo if I’m going to use a red wheat.
