Hi All,
Has anyone had an opportunity to compare this recipe to Amaroso Sub Roll? They are my favorite and I haven’t been able to come close in flavor and texture.
Thanks, Keith

I found a recipe with a comment saying the rolls were similar to Amoroso’s.

The ingredients are very similar. I’ll paste them below. The bake temp is cooler for Breadtopia.

Breadtopia

  • 270 grams water, warmed to approx 110°F (1 cup + 2 Tbsp)
  • 13 grams sugar (1 Tbsp)
  • 4 grams instant yeast (1 tsp)
  • 13 grams oil (1 Tbsp)
  • 390 grams flour, 195g all purpose and 195g bread flour (3 cups)
  • 7 grams salt (1 1/2 tsp)
  • optional one egg and 1 Tbsp water, whisked together, to brush on the dough if you want the crust to be shiny

Vs.

RockRecipes

  • 1 envelope active dry yeast, 7-8 grams or about 2 tsp, not instant yeast
  • 4 tsp sugar
  • 3 cups all purpose flour + a little more for kneading
  • 1 1/2 tsp salt
  • 1 1/3 cups water, lukewarm
  • 2 tbsp olive oil, plus a little more to brush on the rolls
