My second ovens ( and last) question is, should I choose a double door/side-by-side door, or the standard single/up-down door?

Of the two door styles you mention, the traditional, fold down door would be preferred for venting the oven. I think I might also prefer it for cracking open the oven to take a peek at how things are cooking in there without releasing too much heat. If wall mounted it might not matter.

We replaced our old Bosch ovens a couple of years ago with the GE Café Line stacked ovens. The upper has “French doors” (i.e.-two vertical doors opening left & right). The bottom oven is traditional pull-down.
We LOVE these things! Basically, I leave the lower oven set up with stone and pan for bread baking because I often use it as such . But, the combination is great and my wife loves the ease with which the upper oven is accessed.
