Breadtopia Batard Clay Baker question

I usually use my Batard Clay Baker to bake Breadtopia’s Artisan Sourdough Rye Bread, but I want to use it to bake a loaf of Bread Becker’s Basic Dough, using fresh ground whole wheat bread using my Breadtopia Batard Clay Baker.
The recipe calls for an oven temperature of 350 degrees for 25-30 minutes in a regular open bread pan.
When I use the Batard Clay Baker, what temperature should I use?
Breadtopia’s Basic Whole Wheat Bread calls for

  • 500°F for 20 minutes, lid on
  • 450°F for 10-15 minutes, lid off

Will these times work?

What’s the dough weight of the Bread Becker recipe? Cups of flour and water also works to help me gauge bake time.

Second question: do you want a soft sandwich crust or do you want a crispy-crunchy artisan bread crust?
