Books about bread making

Just curious what some of your favorite books about bread making are.

I have quite a collection but my 2 favorites are “The Village Baker” by Joe Ortiz and “Bread Alone” by Dan Leader. For years my go to bread was Pain Au Levain from “Bread Alone”. Then I went to the original bakery in the Catskills bought a loaf of Pain Au Levain and realized I didn’t know what 1990’s.

Thankfully, I’ve learned a lot since then and am a much better baker today.
