Time flexibility on proving sourdough?

Hi! I am new to sourdough bread making. I have just mixed up a rye sourdough mix (1449 hrs) and read on and discover it should prove for 12-14 hours. Can I leave it it in the fridge to let it prove slower and then continue with the end stage of baking it when I get up in the morning, or will I have to be awake with the owls? Today is fairly warm here in the U.K., will that make a difference to the proving? Should I put it in the fridge when the weather gets warmer? Looking forward to your replies. Many thanks. Sandra
