Tartine bread bake with challenges

Was a challenging morning: dough slept for final prove in the fridge. Preheated gas oven :frowning: to 500F. This one is acting up lately: always sudden it shows a F2 signal and peeps. Tech. Does not know what it is, because it seems to run anyway. I am able. To bypass by turning it off and on again.
I put the 3 pieces on a cold baking sheet in order not to have to open the stove 3 times, fortunately with paper underneath. Boy did that stick where it spilled over the paper.
I try to have some moisture in the oven by having a tray with lava stones filled and heated water in it on the lowest shelf. Otherwise one gets what you get with a gas oven.
The only deviation from the original formula was the starter: final feed with AP because Ww was still in the freezer :(.
Have to say I am pleased with the end result ( not really with the color…and the oven spring…)
