Could one let this bulk ferment overnight in the fridge? Then take out, cut into the slippers, proof for 30 and then bake?

Refrigeration is fine, just keep in mind that if you put the dough in the refrigerator early on in the fermentation process, it might get pretty dormant and need to warm up and ferment for a long time the next day in order to be mature enough to shape.
This formula has a lot of starter though, so it might develop fine in the refrigerator.
