Sourdough Crepes

One way that I use “discard” starter is to make crepes. The following is the basic recipe that I use.

120 gr. (1/2 cup) starter (100% hydration)
scant 1/4 cup milk
1 T melted butter (heat the milk and butter together until the butter is melted)
1 large egg
1 T honey

This quantity of batter makes 4 10" crepes. To make a larger batch, feed the starter overnight to double, triple, etc.
