Some newby questions

I recieved your beginners kit for Christmas, So excited.
1 what size /weight of bread dough do you use in in the clay bread baker?
2 Can you proof bread again if it sticks to the proofing basket?
I used a recipe for 1 loaf but no weight , kind of small.
It stuck to basket and degassed quite a bit, very flat but still tasted wonderful

Welcome! I remember the joy of starting out… just take it slow and remember you’re gaining experience with every try.

You can proof the bread again, but it really depends on how long the previous proofs were. My original loaves were a little flat and I thought it was the degassing… but then I played with the hydration. I found that even if the dough degassed a lot removing it from the basket, it would rise just fine when baking.

So in short (on all your questions): experiment!

Also, if you haven’t read the detailed description for each of the starter kit products, that’s a good idea. They mention lots of related things… for instance using rice flour to line the basket. I can’t find it now, but I’m pretty sure it was Eric who said rice flour is like “little ball bearings” against stickiness.
