Revive Sourdough starter duration and process

Just received it today and I did revive it as your instructions.

How many days I should feed it before I’m able to use it on bread dough? Is it 7 days?

And when I should throw away the half of the starter to prevent tons of starters, and perhaps by doing this, the sourness will be reduced?

Hi Elny. There are no hard rules on when you can use it. I usually tell people that when your starter rises well after feeding it, so should your bread when you use the starter for baking. Could be a few days, a week, whenever it’s bubbly, spongy, rises well.
