Proofing Tent of my own design

Weekly baking is the Mother of Invention

I have been baking a lot of sourdough baguettes…

At several stages the dough is covered with a damp cloth…

Sometimes the cloth sticks to the dough…

So I created a “proofing tent” for the damp cloth…

It works very well…

These are seeded sourdough baguettes…they will be ready for the oven in about 2 hours
