Being a lover of olive bread, thank you La Brea Bakery, I was happy to try this recipe from Breadtopia.
The dough was really wet and a bit tough to handle but I managed to get it into the proofing basket without any disasters. The loaf turned out really nice although I didn’t get a lot of rise in the oven. Got a nice open crumb and the flavor was good. I think the 7oz. of Parmesan was a bit over the top.
