Btw I love pineapple upside down cake too. My mother-in-law introduced me to it. I think the recipe from the Betty Crocker cookbook.

@Elle_Dechene I’m sure einkorn will be delicious this cake. It’s less absorbent than rouge de bordeaux, so you may want to use a little more of it and/or bake for a little longer. Maybe 190-200g einkorn.
