I’m just unsure if what the floating part means. Thanks!

I mark the expansion/growth of my starter by feeding it and wrapping a rubber band around my jar at the beginning level. When the starter has more than doubled, that is a sign that it’s ready to use.

Another popular signal of aeration of the starter and readiness (good fermentation activity) is that the starter floats in water. About a spoonful of it. If you happen to have starter that is very dry or wet in hydration, this may not work. In general, it’s a reasonable test though.
