First attempt sourdough... did not expect this?

Hey guys!

I was wondering if anyone could tell me what has happened here? Haha! This is my forst attempt at sourdough my dough was 1part sourdough (100g) 2parts water and 3 parts flour. Can anyone tell me what went wrong here?

The flavour is great crust is brilliant its just that odd saucer shape and cavity internally. Any help appreciated!

Looks like it took the shape of your pan

My hunch is too short a bulk ferment, followed by a long proof. You had gases build up but the gluten wasn’t strong enough to hold it in smaller air pockets.

I’m guessing here though based on big cavities when I rush the bulk and try to make up for it in the proof.
