Corn Query

I have a new Mockmill coming and would like recs on corn before I order grain. In that area i will be making cornmeal for general use, for cornbread and for Portuguese Broa, polenta for polenta and probably will experiment with grits and posole. I will definitely want dent corn, but would welcome comments on Niles Red Flint and.Bloody Butcher as options for these and similar (masa, maybe) uses. Thanks

I’ve only used niles red in a sourdough bread, biscuits and tortillas that were also part all purpose/bread flour. Delicious and good results.
