Bread Machine sourdough

I’ve created a basic sourdough recipe for white bread which I’m very pleased with, and even tastes better than the bread I have been making in the oven. Very good for people with not much time.

It comes out with a good crust and reasonable hole size. I found the secret was to take out the dough paddle which then gives a much longer rise.

I am using a Panasonic 2502 bread machine.

Recipe:

495g strong white flour
5-10 g Diax malt flour (optional)
1 1/4 tsp salt
50ml fresh starter (quite liquid)
300ml water

  1. At about 7:30pm, Add Dry ingredients to bread machine, mix together a bit, then add starter and water.

  2. Select programme 16, basic white dough setting.

  3. At about 9-9:30 or 10 ish, remove dough paddle and select basic white bread setting, no 1. Select large loaf size, and dark crust.

  4. Calculate timer setting depending on when you want the loaf to be ready, at least 8-10 hours, and press start.

  5. Take bread out in the morning and leave to cool.

Makes great toast!

A nice spelt sourdough I made today, using 100% white spelt with 20g of malt flour and 10g of Diax flour.
