Beginner Friendly High Protein Sourdough Bread Recipe?

Hi there,
New baker here. I purchased the starter and high-protein flour from Breadtopia. I cannot find any recipe that calls for just the high protein. Does all sourdough recipes need to have whole wheat?

This is a wetter dough than the one above. Usually this means the inside of the bread will have more holes.
