375g bread flour
7g fine salt
5g dried yeast
215g water no higher than 110º;
Yield 3 baguettes.
Warm Water
Mix dry ingredients;
Add water and mix and knead until smooth ball of dough;
Put in oiled bowl cover and raise at room temp for 40 minutes;
Knead again to remove gas then divide into equal parts;
Roll into baguettes a bit longer than necessary;
Place in baguette rack or mold;
Cover and let rise for 20 min;
Preheat oven to 450º bake 25 minutes.
