Can you proof any type of dough in Bannetons and Brotforms ? I only see sourdough no matter where I search.
Yes You can proof any dough in them, except maybe some of the very wet Rye doughs.
@mnman, for the wetter doughs I just use the cotton liner that I have heavily floured with rice flour inside the baskets for rising the dough. So far, I haven’t had any problems with the dough releasing into the preheated clay baker when it’s done rising. It’s worked perfectly for me.
