About the Baking Fails category

What didn’t work and how to make it work next time.

I am new to bread baking. I have been using whole wheat no knead bread recipes and baking them in a cast iron Dutch oven. The loaf comes out beautifully and with a good crust, but is tacky inside. Not quite cooked all the way through, even though a thermometer reads 200 degrees. I would appreciate any suggestions. Thank you.
