No-knead 100% fresh ground flour Sourdough

Some pictures of today’s loaves. I use a variation of a sourdough recipe from an old Betty Crocker cookbook with some no knead & baking instructions from Eric’s recipe. These are baked in some ceramic crocks. I use the crocks so I get taller sidewalls for making sandwiches.

Wonderful looking loaves. What kind of wheat berries?

I’m pretty sure these are winter white wheat berries. They came from a friend getting out of bread making but the buckets weren’t labeled.
